Using an MEC 600 and its supposed to resize during the deprime so maybe I'm putting enough elbow grease into it?

On the MEC 600 Jr presses, the resizing collet can be adjusted. Make sure that it gets as low as it can go on the shell to get a complete resize.
If the Jr. is older, you may need a new colllet.

Usually sticky shells are branded with the Winchester logo. Remington are actually some of the best shells out there.
If you continue to get shells that stick in there, then you may want to consider polishing the inside of your barrel.
